It changes how the tables move. On a dovetail-way jointer the tables slide on an incline, so lowering the infeed table also moves it away from the cutterhead, and the gap at the cutting edge grows with the depth of cut. Parallelogram tables move on four pivoting arms and stay the same distance from the cutterhead through the range, so the cut stays clean at any depth. It also makes the tables easier to set coplanar.

Yes, if you want flat boards. A planer references the face on the bed and cuts the top face parallel to it, so a twisted board goes in twisted and comes out thinner and still twisted.
